Mozz-Stuffed Chicken Meatball Sliders

The past few weeks I’ve been completely consumed with packing and moving into my new house!

My lovely little row home on the South Side of Bethlehem. I loooove it! Boyfriend and I moved in last Friday and have done a pretty good job of getting unpacked and set up to live despite our busy schedules. Still in need of a dining room set and we have a lot of art to hang up, but we are in lurve with the house. And I finally have a big, clean kitchen all to myself! This is the very first thing I made:

Mozzarella Stuffed Chicken Meatball Sliders (adapted from Jessica at How Sweet Eats)
makes approx. 8 meatballs

  • 1 lb. ground chicken
  • 1 egg
  • 1 tablespoon minced garlic in olive oil
  • 1/2 cup aged provolone, shredded
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1/4 cup breadcrumbs
  • 2 ounces fresh mozzarella, cubed
  • 1 ounce fresh mozzarella, sliced
  • 2 cups pasta sauce
  • package slider buns or dinner rolls

Preheat over to 400F.

In a large bowl, combine ground chicken, egg, minced garlic, provolone, parsley, basil, salt and breadcrumbs. Mix with hands until combined.

Spray a glass baking dish with cooking spray and add 1-1/2 cups pasta sauce. Roll ground chicken mixture into golfball-sized balls and press a piece of mozzarella into it. Cover the mozzarella with the chicken and put it in the sauce. Repeat until all chicken has been made into meatballs.

Once the dish is filled with all the meatballs, sprinkle with remaining sauce, additional shredded provolone and breadcrumbs, if desired. Bake for 30-35 minutes until meatballs are cooked through.

Serve one meatball per slider/dinner roll and top with sliced mozzarella. Devour because they’re so good and rejoice in how filling they are since you’ll have leftovers to nom on the next day.

I don’t much care for beef so in adapting Jessica’s recipe, I subbed in the ground chicken. So good! And healthier, but use beef as you wish. Boyfriend loved them and I am definitely going to be making these again. Would certainly be a great dish for a casual get together.
